my oldest daughter starts KINDERGARTEN next week. eeeek!! i’m not emotionally ready, please don’t ask me about it lol.

but it does mean we’re officially getting into the swing of back to school over here, the routines, the earlier mornings, the packed lunches, all of it. and honestly, this is the perfect time to jump in and start cooking with us. because the last thing you need right now is to be wasting time hunting for recipes or doing math to figure out how to hit your protein and fiber goals. that’s the whole reason i do it for you every single week.

also!! you guys have been asking for kid food content on instagram and your wish is my command: get ready for grocery hauls, kid lunchbox ideas, balanced breakfasts for busy school mornings, and whatever else you want to know (seriously, comment below and tell me what would help you most).

ok, let’s get into this week’s meal plan.

and it’s SUCH a good week to start with, because your appliances do almost everything: the slow cooker, the air fryer, one wok, and a breakfast that makes itself overnight. every day lands between 121 and 138 grams of protein and 25 to 36 grams of fiber (see? both goals, handled). here’s the menu:

✔️ breakfast: banana bread overnight oats (31g protein), they genuinely taste like banana bread batter and there’s zero cooking, you mash, stir, and refrigerate on sunday and breakfast is waiting for you all five mornings

✔️ lunch: taco pasta salad early in the week (37g protein!!), then your dinner leftovers carry you into friday with chicken fried rice and bbq chimichurri chicken, so you cook dinner once and eat twice. and yes, a pasta salad with 37g of protein, the chickpea pasta is doing a lot of quiet work in there

✔️ snack: apple slices with peanut butter yogurt dip (24g protein), you stir peanut butter into greek yogurt and suddenly it’s a dip that tastes like dessert and eats like a protein snack, the kids will be stealing it

✔️ dinners: slow cooker al pastor tacos, easy chicken fried rice, bbq chimichurri chicken with sweet potato wedges, and air fryer sesame salmon with broccoli & rice, all landing between 33 and 46g of protein per serving

one more thing about those al pastor tacos, because the pineapple goes IN the slow cooker with the pork and the chipotles, so it gets all jammy and caramelized in there, and then you spoon it back over the tacos at the end. sweet, smoky, a little spicy. restaurant-level dinner, monday-level effort.
