The corn cup series continues — this time to Italy with pesto, mascarpone cream, and parmesan crisps, and to Nashville with brown butter, hot honey, ranch crema, and pickle relish.
Last time we established the format: charred corn, something creamy, salt, acid, heat, crunch — all in a cup. Mexico and Korea proved the skeleton works. Now we’re taking it two more places.
The Italian cup folds charred corn and orzo into a fresh jalapeño pesto, binds it with a mascarpone-pesto-parmesan cream, and finishes it with cherry tomatoes, Calabrian chili oil, and shards of parmesan crisp. It eats like a summer pasta salad that got dressed up.
The Nashville cup is the loud one. Corn tossed in a ranch-inspired crema, warm hot honey spiked with cayenne and chipotle over the top, and — the move that makes the whole thing — finely diced bread and butter pickles as relish. Sweet heat, cold ranch, sour crunch. It’s Nashville hot chicken logic applied to a cup of corn, and it works exactly as well as that sounds.
