Happy Friday, friends!

What a week! We got dumped with snow this morning and have more snow expected in the next few days, putting a damper on my spring gardening fever. I know spring is here, but man, it’s hard to feel springy when you’re shoveling snow. Besides the snow, there was great food this week; I think it is my favorite menu so far this month.

I loved reflecting on the week and sharing what brought me joy, so I thought I’d continue the sharing for another Friday Faves. It brought me joy to hear about the joys in your week, too, so let’s continue sharing. Here’s my joy list.

  1. Designing the garden planting plan on Canva was so much fun. 

  2. Creamy Cascatelli and Crispy Chicken. This funky pasta shape, which means “waterfalls” in Italian, was a joy to eat. It was the perfect shape to absorb all that saucey goodness.

  3. Smoked Sardines. My new snack obsession this week included smoked sardines, pepperoncini, and cottage cheese. Yes, it was a little unconventional, but it just kind of came together perfectly scooped up with corn chips. Creamy, tangy, spicy, smokey, pickled deliciousness. It just works.

  • Leftover frittata. Leeks, fennel, cotija cheese, Italian Sausage, and many herbs. This fridge clean-out dinner, although simple, made a super satisfying meal and snack for the next day. I ate alongside roasted fingerling potatoes with lots of parmesan. I can’t wait to make frittatas more part of my dinner rotation. I shared the quick recipe in Monday’s newsletter.

  • Thai-inspired chicken Salad. This Pinch of Yum recipe did not disappoint. Spicy, sweet, and crunchy, it had it all. I even splurged on a mango, and for the leftovers, I added clementines, too. This is a quick, simple recipe that I will be making again for sure; I highly recommend it. I’ll eat salads like this every day.

  • Sardines and Beans with Flatbread. I expected to enjoy this less than I did. It’s so satisfying and tasty. I didn’t get around to the focaccia planned for this week, so I went with homemade flatbread instead. It was the perfect vehicle for scooping up all the tomatoey beans. The substitutions I made were sriracha instead of chilis and canned tomatoes instead of fresh. I enjoyed how simple and quick this recipe came together. Quite tasty. If you don’t like canned fish, don’t look too closely; they blend in with the sauce deliciously. The recipe is from Cafe Hailee.

  • Crispy Chicken with Creamy Garlic Pasta. This is the recipe I made tonight, and it might be my favorite. I typically don’t eat a lot of pasta, but I was craving something creamy and garlicky, and this hit the spot. I also added some leftover leek to the sauce and threw in some parmesan to the crispy coating on the chicken thighs. There’s nothing better than crispy, crunchy, juicy parmesan panko chicken over the creamiest garlicky pasta. The sauce included butter, leeks, garlic, heavy cream, lemon zest, juice, and parmesan cheese. Yum.

  • 4 Chicken thighs

  • Dill and Cilantro

  • English muffins from the freezer

  • 1/2 a cabbage

  • eggs

  • corn starch

  • sardines

  • kimchi

  • tomato paste
