Every Friday morning I sit down to write this newsletter and I’m like what do I write about this week?
So I’ve been looking at the search queries on old Salty Ginger and saw people were making a few repeated searches. So I polled my Insta audience yesterday but I am keen to see what my readers would like me to work on first.
I wanted to get out a recipe for coconut ice this week - something nostalgic, really simple, and with a slight twist. And my first round was too sweet. So I’m looking to tone down the sweetness and add an option to make it a bit more grown-up.
We also tested a new and improved version of my chocolate chip cookies on the weekend…so that is also on the to-do list.
But this week I’m sharing a South African favorite. Something that I think is perfect as the weather cools down in the South, and for those nippy Spring evenings in the North.
This is an easy, baked, homemade pudding. It’s made with a touch of Apricot jam, and then it’s drenched in a cream sauce. This soft, rich pudding is then served with your choice of custard, cream, or ice cream.
I like making my cream sauce with evaporated milk, but cream works just as well. And if you are feeling a little bit naughty, you can add in some brandy instead of water.
Now, this is unlike an American-style pudding, and more akin to an English-type pudding that is baked, steamed, or boiled.
