🟡 10-Minute Edible Chickpea Cookie Dough

This is a ten-minute recipe that requires one food processor and is fully approved for direct spoon-to-mouth consumption.

The secret ingredient doing all the heavy lifting? Chickpeas. They disappear completely into a rich, fudgy base that tastes like a sugar cookie had a baby with a Reese’s cup, no one will know they’re eating a legume for dessert.

  • 1½ C chickpeas, or 1 can (about 9 oz / 255 g once rinsed and drained)

  • ½ C (120 g) tahini or creamy unsalted peanut butter

  • 2 tsp (10 ml) vanilla extract

  • 1 cup pitted Deglet dates, about 22-24 (160 g)

  • ¼ cup maple or date syrup, optional: start with 2 Tbsp (30 ml) and add more to taste

  • 2 Tbsp (15 g) nutritional yeast or oat flour

  • ⅛ tsp (a generous pinch) salt, optional

  • ½ C (85 g) unsweetened chocolate chips

  • Food processor or high-speed blender

  • Measuring cups and spoons

  • Spatula

  • Mixing bowl

  • Airtight container

  1. Add everything except the chocolate chips to the food processor. Blend until smooth and thick, scraping down the sides as needed.

  2. Transfer to a bowl, then fold in the chocolate chips.

  3. Chill in the fridge for at least 30 minutes, this firms up the texture and makes it taste even more like cookie dough.

  4. Store in an airtight container in the fridge for up to 10 days, or freeze for up to 2 months.

  • Using canned chickpeas? Rinse and drain well. A 15 oz can yields roughly 9 oz (255 g) once drained.

  • Stick to the creamy variety of tahini or peanut butter.

  • Dough too runny? Add 2 Tbsp (15 g) oat flour to thicken, or date sugar if it needs more sweetness. The goal is doughy and sticky, not cakey.

  • Roll it into bite-sized balls if you want portion control.

  • Eat it straight off the spatula (no judgment).

  • Roll into balls and freeze for a grab-and-go snack.

  • Crumble over plant-based ice cream for an instant sundae upgrade.

  • Chickpeas: ~12g of plant-based protein and a solid dose of fiber per cup, completely undetectable once blended.

  • Tahini: One of the best plant-based sources of calcium and healthy fats around and a smart dairy swap for everything from cookie dough to salad dressings and is a great option if you have a peanut allergy.

This is the kind of recipe that rewards a little creativity. Swap the tahini for almond butter, throw in a pinch of cinnamon, or double the batch because, let’s be honest, it’s not going to last long either way.
