The First Year

Most of the conversation about a restaurant brand happens before it opens. The identity work, the decisions about what the brand is and what it stands for, the care taken over the mark and the palette and the voice — all of that happens in the months leading up to launch. The opening becomes the finish line.

We have come to think of it as the starting line.

What we have watched over seventeen years is that a brand is not something you build and then have. It is something you maintain, the way you maintain a kitchen or a staff. The work of the opening sets the terms. What happens in the months after determines whether those terms hold.

The ones that come through year one feeling more like themselves than when they opened share something: someone inside the operation treats the brand as part of the ongoing work, not a completed project. The specials board gets noticed when it drifts. The paper stock on the restocked coasters gets questioned. Reprinting something means asking whether it still matches.

A brand left alone after launch does not stay where it was. It drifts through a series of reasonable decisions — the matchbooks ran out, someone found a substitute; the uniform vendor had a six-week lead time, someone found a faster one — that accumulate quietly until the thing on the wall no longer matches the thing on the menu.

By month twelve, you can see what a brand is made of — not the original design work, but how it has been held. Some brands are sharper at the end of year one than at opening: the mark has been applied to things nobody anticipated at the brief, and it held. Others have shifted — not dramatically, not all at once, but the gap between what was designed and what’s in use has grown wide enough to matter.

The launch is when a brand becomes visible. The first year is when it becomes real.
