Happy Monday! It’s raining in Brooklyn, and I’m currently preparing for the week by deciding what recipes to test, what to film, what to make for dinner tonight, and what else needs to get done. I’m going back to Vermont tomorrow to spend time with my family and attend my best friend’s wedding in Stowe, so my goal for the day is to get ahead.
I’ve been saving an abnormal amount of recipes on Substack and Instagram lately that I keep meaning to make, and so many of my dm’s to friends, and Lucas, are recipes I think look great and want to make. While I honestly don’t usually get around to making them, inspiration is always good, so I thought I would share some of my favorites from this past week in case you also need a little inspiration for what to make this week!
I’ve also included a very simple non-recipe recipe for Swiss chard that I make a lot when it’s in season. It’s a vegetable I don’t always know what to do with, and this method only requires a few ingredients. It's so nourishing and cozy, and it pairs well with roasted or grilled chicken or sausage. It’s not the most beautiful dish in the world, but I promise you it’s delicious.
Creamy bone broth noodles & peas from - the macaroni looks so glossy, and with the bone broth, I just know it’s such a warming, cozy meal. It looks SO good.
Crispy spring onion chicken with edamame coriander & lime rice with ginger dressing from Melie's The Hub Newsletter
Coconut beef broth bowls from The Fit Feast - a coconut broth poured over rice and ground beef, with cucumbers and sesame seeds on top.
Parmesan chicken salad (inspired by Julius Roberts), but from Matt - you start off by roasting a chicken, then you use some of the chicken fat to make a dressing, then toss the chicken with lettuce, croutons, green peas, and lots of Parm.
Oatmeal chocolate chip blueberry pancakes by Audrey Leonard - one day this week I want to make breakfast for dinner, and these are high on my list!
Blueberry cinnamon rolls with cream cheese icing and salted toffee sauce by me! You can find the recipe here, and yes, they are decadent, but they are so good and very soft and fluffy.
I love making this as a warming side to serve with roasted or grilled chicken or sausage, or to just eat on its own with a dollop of sour cream or yogurt. I prefer mine fairly brothy, but if you don’t, you can skip adding the bone broth/stock and just deglaze the pan with a tablespoon or two of water.
Ingredients
2 tablespoons extra-virgin olive oil
1/2 large yellow onion (or 1 whole small), halved and thinly sliced
3 garlic cloves, minced
1-inch piece of fresh ginger, grated
1/2 cup bone broth or chicken stock
1 large bunch Swiss or rainbow chard, leaves and stems chopped
2 teaspoons Better Than Bouillon, roasted chicken base
2 teaspoons white wine vinegar
Directions
Heat the olive oil in a large pot with a lid over medium-low. Add the onion and cook, stirring occasionally, until softened and translucent, about 5 minutes. Add the garlic and ginger, then cook until fragrant (another 30 seconds).
Stir in the bone broth or stock and scrape up any bits stuck to the bottom of the pan. Add the greens, then cover with a lid and cook, stirring occasionally, until mostly cooked down, 3 to 5 minutes. Stir in the bouillon and cook until fully wilted and the flavors have melded, another 5 minutes. Stir in the vinegar and season to taste with salt and pepper.
If you want to make this more of a meal, you can always add a can of white cannellini beans or cooked lentils.
A few of my favorites from this week
Triviata lamp in white by Sezane – I haven't gotten a matching one for the other bedside table yet, but it’s really elevated our bedroom so far!
Hanni water balm - for anyone who hates moisturizing as much as I do, this is a great product because it sprays on. It also smells incredible.
Damson Madder raincoat - I’ve struggled for years to find a cute raincoat, and I finally got one! It’s oversized, which I love, and there are so many cute patterns. A necessity for fall.
Plain Jane New York Shortie T-shirt - my most worn recent purchase. It’s the perfect white t and such good quality.
I hope this was helpful to anyone looking for more meal ideas! If you have any recipe recommendations to include next week, let me know in the comments or send them in the chat below!
