ok so this week’s menu is proof that dinner does not need to be complicated to be really, really good.
we’re leaning into big flavors: caramelized vegetables and crispy halloumi, sticky hot-honey salmon with deeply charred broccolini, and juicy beef kofta with warm spices and a cool garlicky yogurt sauce. so basically, a little sweet, a little smoky, a little spicy, and a lot of things I (and hopefully you) actually want to eat.
as always, the goal isn’t to spend your Sunday making 47 containers of sad chicken and rice. we’re prepping a few smart components that can pull their weight throughout the week, so when dinner rolls around, you’re mostly just assembling, cooking, and pretending you had your life together all along.
