I feel like every time I’ve gone on social media in the last few weeks it’s been met with people who are begging for Autumn to come. & although I love a good movie and rainy day I must say - I’m not looking forward to saying goodbye to summer food and produce.
I created this recipe as an ode to the end of summer, where we are leaning toward turning our ovens on again, but it’s still warm and we want something light, zingy and delicious.
Enter my Chicken Fat Potato Salad: Potatoes that have been cooked in the juices of a succulent roast chicken, but kept zingy with sumac, tomatoes and cucumbers.
