Weekly Meal Prep 7/20/26

To build your bowl:

  • Marinated Bulgogi Chicken Thighs (marinade recipe)

  • Cooked Rice (my easy oven rice method)

  • Gochujang Aioli for drizzling on top

  • Sesame Seeds for garnish

  • Green Onions for garnish

  • Fresh Lime Wedge for garnish

Gochujang Aioli:

  • 1/3 cup mayo

  • 2-3 tbsp gochujang paste

  • 1 -2 tbsp maple syrup

  • juice of half a lime

  • 1 tsp sesame oil

I’ve made this marinade dozens of times! The original recipe is from food blogger Plays Well With Butter and her full recipe is linked HERE.

How To:

  1. Make the marinade by adding all of the ingredients into a blender and blend until smooth. Pour over your boneless skinless chicken thighs, and mix until each piece of chicken is fully coated. Cover and put in the fridge to marinate for at least one hour.

  2. To cook the chicken - I baked mine on a baking sheet at 375ºF for 35 minutes! It is also delicious made one the grill!

  3. Make the Gochujang Aioli. Add all ingredients to a small bowl and whisk until combined. Taste and adjust as needed - more maple syrup for more sweetness, more gochujang for more spice.

  4. Assemble the bowls and enjoy!

    Note** If you are meal prepping this, make sure you allow everything to cool completely before assembling! Keep the sauce in a small condiment container to pour on top after reheating. I have my go to containers linked at the bottom of this post!

Loved having this made ahead for a summer cookout! It tastes best if it sits in the fridge for 1-2 days before serving :)

Ingredients:

  • 3 lb baby gold potatoes, washed and quartered

  • 1 tbsp salt

  • 6 cups water

  • 1/2 cup mayo

  • 3/4 cup sour cream

  • 1/2 tbsp dijon mustard

  • 1/2 packet of Kinder’s ranch seasoning

  • 1/2 cup diced celery (about 2-3 ribs)

  • 1/2 cup diced red onion

  • 1/4 cup diced chives, plus more for topping

  • Salt and pepper to taste

How To:

  1. Add the water, salt and potatoes to a pot and bring to a boil.

  2. Boil the potatoes for about 15 minutes or until fork tender, then drain. Spread onto a baking sheet to allow to cool completely.

  3. While the potatoes are cooling, make the dressing - Add the mayo, sour cream, dijon mustard, ranch seasoning, celery, red onion and chives to a large bowl and mix to combine. At this point you can add salt and pepper if needed, but I personally found it was salty enough for my taste without!

  4. Add the cooled potatoes and mix until completely coated.

  5. Store in an air tight container and allow to chill overnight.

We love a crockpot meal!!

Ingredients:

  • 1 cup beef bone broth (The one I used!)

  • 1/3 cup low sodium soy sauce

  • 1/4 cup brown sugar, loosely packed

  • 3 garlic cloves, grated

  • 2 tsp ginger powder

  • 1/2 tbsp sesame oil

  • 2 tsp rice vinegar

  • 1 tbsp sriracha

  • 1.5 lb stew beef chunks

  • 1 tbsp arrowroot starch + 2 tbsp water

How To:

  1. Add the bone broth, soy sauce, brown sugar, garlic, ginger, sesame oil, rice vinegar and sriracha to your crockpot, then whisk to combine.

  2. Add the beef chunks and make sure they’re coated in the sauce mixture before adding the crockpot lid.

  3. Cook on low for 4 hours. The beef should be tender and falling apart!

  4. Turn the crockpot on high, then mix together the arrowroot starch and water to make a slurry. Pour this into the crockpot, mix and put the lid back on. Allow to cook for another 20-30 minutes to thicken!

  5. This is optional, but just before serving, add the beef and some of the sauce to a sheet pan and broil for 5 minutes or until it starts to slightly caramelize.

  6. Serve with roasted potato wedges or cooked rice, some fresh cucumber, sesame seeds and green onions!

Ingredients:

Concentrate:

  • 12 lemons, peels removed

  • 16 oz strawberries, stems removed

Lemonade:

  • 3 cups concentrate

  • 1.5 Liter filtered water

  • 1/2 - 3/4 cup maple syrup

How To:

  1. Add the peeled lemons and fresh strawberries to your juicer and juice to make the concentrate.

  2. Make the lemonade by adding all the ingredients to a large pitcher and mix until combined!

  3. Serve over ice
