As much as I love slaving over a hot stove on a Sunday, cooking a meaty Italian gravy as thick as a bear, it’s too damn hot for all that right now. I just want something light and fast that captures summer. This one is like a ray of sunshine on a plate and takes 25 minutes. This is really just Pasta Pomodoro with a cute name.
The challenge may be finding the most beautiful, ripest tomatoes you can. Could be worth trekking to your local farmer’s market. You can make this with red tomatoes but the yellow ones are so stunning for this. A big chonker of an heirloom can also make this recipe sing. Check out these field monsters from the Union Square Farmer’s market in New York!
1 lb pasta, spaghetti, bucatini or linguine (but you can use whatever’s in your pantry, really)
