A few years ago, I was constantly chasing my next energy boost.

I would hit a wall in the afternoon, reach for something sweet, feel better for a little while, and then crash again. Looking back, I can see that a big piece of the puzzle was my iron deficiency. My ferritin levels were low, my energy wasn’t where it should have been, and I found myself relying on sugar to push through the day.

At the time, I thought I simply had a sweet tooth. Now I know it was more complicated than that.

As I started paying attention to my nutrition, working on my iron levels, and building meals around protein, fiber, and healthy fats, something interesting happened: the intense sugar cravings began to fade. I still love something sweet after a meal or with an afternoon cup of tea, but I no longer need it to get through the day.

That’s when I became obsessed with creating whole-food treats.

Not treats designed to mimic candy. Not “healthy” desserts made with a long list of specialty ingredients. Just simple recipes built from nourishing ingredients that leave you feeling satisfied instead of reaching for another snack 30 minutes later.

These Apricot Hemp Bites are a perfect example.

Naturally sweet dried apricots provide fiber, potassium, and iron. Almond flour, flax, and hemp seeds add healthy fats, plant protein, and minerals. A layer of dark chocolate makes them feel indulgent, while a swirl of almond butter takes them firmly into treat territory.

Each bite contains nearly 1 mg of iron, along with fiber, magnesium, and healthy fats, making them a delicious little snack to keep in the fridge or freezer whenever you want something sweet.

  • Naturally sweetened with dried apricots

  • Rich in fiber and healthy fats

  • Nearly 1 mg of iron per bite

  • No baking required

  • Freezer-friendly

  • Ready in under 15 minutes of hands-on time

Refrigerator: Store in an airtight container for up to 1 week.

Freezer: Store in a freezer-safe container for up to 3 months.

For the best texture, enjoy straight from the fridge or allow frozen bites to sit at room temperature for a few minutes before eating.

Per bite: 99 calories • 2.8g protein • 2.1g fiber • 6.1g healthy fats • 0.9mg iron • 28mg magnesium • 180mg potassium
