Chhole (Chickpeas) for 4 people:

  • Chhole/Chickpeas/Kabuli Chana : 1 bowl (250g)

  • Raw Potato: 1 (medium size)

  • Red Onion: 1 (medium to large size)

  • Tomato: 3 (medium size)

  • Ginger: 1/2 inch piece

  • Garlic: 7-8 cloves

  • Green chilli: 2

  • Salt: 1/2 Tablespoon (you can adjust as per your palate)

  • Red Chilli Powder: 1/3 tablespoon

  • Turmeric: 1/3 tablespoon

  • Garam Masala: 1/2 tablespoon (Recipe for garam masala coming soon)

  • Coriander Powder: 1 tablespoon

  • Asafoetida/Hing powder: 1/4 teaspoon or 2 pinches

  • Cumin seeds/Jeera: 1/2 tablespoon

  • Chana Masala: 3/4 tablespoon (Recipe for chana masala coming soon)

  • Kashmiri Red Pepper Powder: 1/2 tablespoon

  • Dried Fenugreek leaves: 1 1/2 tablespoons

  • Baking Soda: 1/4 tablespoon

  • Bay leaves: 2

  • Cooking Oil (Olive oil/Mustard oil/Any other cooking oil): 2 serving spoons; can be reduced to 1 Serving spoon as well.

Bhature for 4 people:

  • All-purpose flour/refined floor/Maida: 4 bowls

  • Semolina/Sooji: 3/4 bowl

  • Asafoetida/Hing powder: 1/4 teaspoon or 2 pinches

  • Baking soda: 1/2 teaspoon or 4 pinches

  • Salt: 1/2 tablespoon

  • Cooking Oil (Olive oil/Mustard oil/Any other cooking oil): 2 tablespoons

  • Thick curd: 1 1/2 bowls

  • Cooking oil frying (Olive oil/Mustard oil/Any other cooking oil): 2 bowls/as required.

  • Soak chickpeas (1 bowl) overnight (or 6-7 hours) in water (5 bowls) with 1/4 tablespoon baking soda.

  • Wash the chickpeas properly and put them in a cooker with water (3 bowls). Add 1/2 tablespoon salt, 1 peeled potato and 2 Bay leaves.

  • Close the lid of the cooker and put it on medium flame for 6-7 whistles (around 15-20 minutes).

  • Turn the flame off and open the cooker after 10 minutes so that the steam gets out.

  • Check the chickpea by pressing it between your thumb and index finger; it should be soft and crush easily.

  • Take the potato out separately in a bowl, mash it and mix it again with the chickpeas.

  • Put this chickpea preparation on the side, and now we will make the gravy/masala.

  • Peel the onions, ginger, and garlic. Then clean all of them along with the tomatoes and green chilli.

  • Chop them roughly and grind in a mixer. You have prepared the paste.

  • In a pan, pour the oil and put it on medium flame. After 30-40 seconds, add asafoetida/ hing and cumin seeds/jeera.

  • Add the paste to the pan, let it cook for five minutes and keep stirring in between so that it doesn’t stick to the pan.

  • Add red chilli powder, turmeric, coriander powder, chana masala, and kashmiri red pepper powder.

  • Let it cook on low to medium flame for 10-15 minutes till the oil separates from the rest of the mixture.

  • Add this gravy to the boiled chickpeas. Add garam masala and close the lid. Let it cook on medium flame for 2 whistles.

  • Turn the flame off and open the cooker after 10 minutes so that the steam gets out.

  • Add fenugreek leaves. It is ready to be served and enjoyed.

  • Take a big bowl and mix everything except the oil for frying. Knead with your hands to make the dough. If there’s some water needed while preparing, you can add it (maximum 1-2 serving spoons). The dough should be soft.

  • Once the dough is prepared, cover it and let it rest for two hours.

  • Open it and knead it again with your hands once. It is ready for making the bhaturas.

  • Make 12-15 dough balls from the dough by equally dividing it.

  • Roll out the dough balls with a rolling pin. Put some oil on the dough balls to roll them easily. It should not be very thin.

  • Pour the oil into a deep pan and keep it on high flame for 4-5 minutes.

  • Take the rolled-out dough in your hand and put it in the oil carefully, slowly and closely to avoid oil spatters.

  • With a light hand, put some oil over the rolled-out dough and flip it slowly after 20 seconds. You will notice some golden-browning on the cooked part.

  • Lay it all on a plate and enjoy. Best served with onions, green chilli, and mango pickle.
