Aate ka halwa is an Indian dessert that is made from wheat flour, sugar, pure ghee and water. It is very easy to make and needs about 20 minutes of your time. I don’t really have a sweet tooth, but this is something that I have never been able to resist. Hope you enjoy it as much as I do.
Here it goes:
For 4 people:
1 bowl wheat flour
1 bowl white/brown sugar (You can also make it 0.75 bowl if you like things less sweet than most).
1 bowl pure ghee
2 1/2 bowls water
That’s it. Just four things.
For 1 person:
1 tbsp wheat flour
1 tbsp white/brown sugar
1 tbsp pure ghee
2 1/2 tbsp water
The first thing to do is take a pan, put the water and sugar in it. Keep it on low flame till the sugar dissolves. Don’t let it boil.
In a separate pan with a heavy base, take the ghee and wheat flour. Roast them on medium flame for about ten to fifteen minutes while stirring regularly.
Let it roast till there’s a sweet aroma and you see that all the lumps are gone. The mixture should feel smooth and should start separating from the pan (shown below).
Once the mixture is roasted, reduce the flame to low and add the earlier-made sugar syrup while stirring constantly to avoid lumps. Within two to three minutes of continuous stirring, the halwa should start separating from the pan.
This means it is ready and you can now plate it and enjoy.
