My sister Tricia gave me this banana chip muffin recipe for my birthday, and it’s exactly how she cooks — one bowl, all brown sugar (because why complicate it?), and zero fuss.
They’re soft, cozy, and the kind of muffin you make on a random Tuesday when you just need something warm in your kitchen.
3-4 ripe bananas, mashed
1 cup brown sugar
1/2 cup salted butter, melted
2 large eggs
1 teaspoon vanilla extract
1 tablespoon baking powder
3 cups all-purpose flour
1-2 cup chocolate chips
Preheat the oven to 425 degrees.
Mix all wet ingredients well.
Add the rest of the ingredients and mix until combined. Scoop the batter into muffin liners (about 1/4 cup each).
Put the muffins in the hot oven and set a timer for 5 minutes. Reduce the heat to 350 degrees and bake for an additional 15 minutes. Enjoy with a generous pat of butter.
