If you’ve been on the internet the last couple of weeks then you probably have seen various versions of the sheet tray kabob all over your feed. Traditionally its origin is Persian or more so the Middle East.
This is definitely a shortcut version made in a sheet tray because normally kabobs are shaped than grilled over coals. Obviously this is formed on a sheet tray than cooked in an oven with a broil finish for some good color and char.
I used one of my fave spice blends New York Shuk Shawarma spice mix for this along with salt, pepper, garlic powder and some grated onion & garlic. This is a slight riff off my lamb smash burgers recipe and I really enjoyed this shortcut version for easy weeknight dinners and goes great for meal prep too!
