If you’ve been following me for some time then you know I love me a BIG ASS salad!
..and I know that we’ve been a little scared of eating salads because of the poop outbreak but I highly encourage you to support your local farmers’ market and pick up some local produce for your salads especially the greens! Honestly, they taste so much better too and will for sure last longer.
I made a grilled steak & corn salad for my recent Seven Daughters partnership — like, comment and share, if you haven’t already lol. I will grill any chance I get and there is nothing like that charred grilled flavor on corn and steak!
In the land where theres a bunch of salad dressings to make (and you know I love a homemade vinaigrette, it’s just better) sometimes I just love a simple mix of balsamic vinegar, a drizzle of good EVOO (extra virgin olive oil) with lots of flakey sea salt and extra cracks of fresh black pepper.
Also, I love to grab pre-marinated steak from my fave farmers’ market meat vendor and Trader Joes has pretty good marinated steak options as well! I especially like their Carne Asada marinade from Trader Joes and A Dozen Cousins Pollo Asado marinade, when you don’t feel like making your own but want a flavorful option!

Ingredients
1lb flank or skirt steak, pre marinated from your fave grocery store like Trader Joes or A Dozen Cousins (linked above)
Optional Salad Toppings
mixed green salad
cherry tomatoes or heirloom tomatoes, halved or quartered & seasoned with salt and pepper
english cucumber, thinly sliced on a bias
chopped avocado
red onion, thinly sliced
corn on the cob, seasoned with EVOO, salt & pepper and grilled
a very simple dressing - balsamic vinegar and GOOD extra virgin olive oil
flakey sea salt & fresh cracked black pepper
*note: no worries if you don’t have a grill, just cook your steak and corn in a ripping hot cast iron! It will deliver a similar flavor but if you have a grill go ahead and throw them on the grill!
Directions
Wash and dry your lettuce mix and set aside.
Fire up your grill, and place your room temperature marinated steak on the hot side and grill for 3-4 minutes on each side to get a good sear on them and it will cook to a medium steak — my personal fave. Let your steak rest for five minutes so juices are able to redistribute thru the steak
Grill the corn 5-6 minutes around each side so the corn full cooks on all sides and they get some good char marks on them. Run your knife down the husk to remove the corn kernels.
When your steak fully rests, slice against the grain and set aside.
Place the lettuce, charred grilled corn, avocado, cucumbers, red onions and tomatoes in a prep mixing bowl.
Season with salt and pepper then drizzle with some EVOO and balsamic vinegar and toss all together.
Serve in a large serving plate-bowl and add your sliced steak with more finishes of flakey finishing salt and black pepper.

I’m back with one of my favorite salads, a tuna niçoise salad! It’s a classic french salad that is high in protein with chunky tuna & hard boiled eggs but also hearty with boiled baby potatoes, crunchy green beans and crisp lettuce. Also, the dijon vinaigrette is everything!
