Most Oi Muchim recipes start by salting the cucumbers and letting them sit to draw out moisture. While that helps the cucumbers stay crisp longer, I wanted something I could throw together quickly without waiting around. (this is the quick yet delicious version)
So I tested a version that skips the salting step entirely. The result is a fresher, crunchier cucumber salad that comes together in minutes and still delivers the spicy, garlicky, tangy flavor that makes Oi Muchim so addictive.
If you’re making this to eat the same day, this shortcut works surprisingly well and makes it much easier to fit into a busy weeknight meal or busy life in general!
One of the reasons I love this recipe is that it relies on pantry staples. If you already enjoy Korean cooking, there’s a good chance you have most of these ingredients on hand.
*3 cucumbers
*1/2 onion
* 1 tbsp gochujang
* 1–1½ tbsp gochugaru
* 1 tbsp fish sauce
* 3–4 cloves garlic, minced well
* 2 tbsp sugar
1/4 tsp salt
* 1 tbsp vinegar
* ½ onion, thinly sliced
*1 tbsp sesame seeds
*1tsp sesame oil
I used English cucumbers because they’re easy to find and have fewer seeds than standard slicing cucumbers. They also stay crisp even when dressed with the sauce.
If you’re using regular cucumbers, you may want to remove some of the seeds if they’re particularly watery. Or for an even more authentic taste use Persian cucumbers.
The real star of this dish is the balance between spicy, sweet, salty, and tangy.
The gochujang brings depth, the gochugaru adds heat and color, the fish sauce adds umami, and the vinegar keeps everything bright and refreshing. AHHHHHH!
Instructions
Step 1: Prepare the Vegetables
Wash the cucumbers thoroughly and pat them dry. (dont be nasty lol)
Cut each cucumber in half lengthwise, then slice diagonally into bite-sized pieces. Transfer them to a large mixing bowl.
Thinly slice the onion and add it to the bowl with the cucumbers.

Step 2: Make the Sauce
In a small bowl, combine:
Gochujang
Gochugaru
Fish sauce
Minced garlic
Sugar
Vinegar
Whisk until the mixture is smooth and evenly combined.

Step 3: Toss Everything Together
Pour the sauce over the cucumbers and onions.
Using your hands (with gloves) or a spoon, toss until every piece is evenly coated with the seasoning mixture.

Step 4: Finish and Serve
Serve immediately for maximum crunch, or let it sit for 10–15 minutes to allow the flavors to meld together. (I recommend letting them sit for a little while)
first thing you get slapped in the face with is the aroma of the garlic and gochujang while mellowing out with the sweetness and tang. The fish sauce comes through perfectly not being rude to the other flavors but instead complimenting them. Since this achieves all flavor profiles its not wonder why its here today and gone the next. ITS ADDICTING!
For a recipe that came together in just a few minutes, this one seriously overdelivered. The cucumbers stayed crisp, the garlic brought plenty of punch, and the balance of spicy, sweet, and tangy flavors made it hard to stop eating. help….
The biggest surprise was how well it worked without salting the cucumbers first. While I know that’s a step many people swear by, skipping it made this feel approachable enough for a random weeknight without sacrificing the result.
