Cheesy Scalloped Potatoes

Scalloped potatoes are a classic comfort food casserole made from thinly sliced potatoes baked in a rich cream based sauce until tender and golden. While many people confuse them with potatoes au gratin, traditional scalloped potatoes do not necessarily contain cheese. Their appeal comes from the silky layers of potatoes that absorb cream, butter, and seasonings during baking, creating a dish that is both simple and luxurious. WE BREAKING THE RULES THO. In this recipe we’ll be using cheese in the sauce and to top it off because……. I said so!

The type of potato you use has a major impact on the final dish. there’s nor with answer but there is a best answer!

Yukon Gold potatoes are often considered the ideal choice because they hold their shape while becoming creamy and tender. Russet potatoes create a softer, more melt-in-your-mouth texture due to their higher starch content. Waxy potatoes, such as red potatoes, tend to stay firmer and can result in a slightly less creamy casserole.

If you’re making scalloped potatoes for the first time, Yukon Golds offer the best balance of texture, flavor, and reliability. I am using these in my recipe and can tell you they’re delicious!

for the sauce

  • 5 golden Yukon potatoes

  • 4 TBSP unsalted butter

  • 1/2 onion small diced

  • 5 cloves garlic

  • 1/4 Cup ap flour

  • 1 TBSP kosher OCEAN (salt). trust…. potatoes need it

  • 12 oz heavy cream

  • 12 oz chicken stock

  • 1 tsp chopped rosemary

  • 1/2 tsp ground nutmeg

  • 1/2 tsp cayenne pepper

  • 1/4 tsp black pepper

  • 1/2 Cup shredded cheddar cheese

Before broiling

  • cover with grated gruyere cheese
