One of my favorite things about writing these kinds of 5 day meal plans is that it always reminds me we really don’t eat anything fancy. I really try not to overcomplicate the whole dinner situation. And I mix and match a lot of things. Most nights I’m making something I’ve made dozens of times because I already know everyone will eat it.
As a business owner and mom to a 3-year-old, I have to think ahead about dinner so it’s smooth. My motto is to prepare a few things during my daughter’s nap, so all I need to do is just put it in the oven when it’s time to be cooked.
Most nights we have a good mix of simple proteins, vegetables, and carbs that actually keep us full. Nothing that takes forever, nothing that requires a trip to a specialty grocery store, and almost everything makes great leftovers (Troy and I do leftovers for lunch a lot of the time).

One thing I love about planning dinners this way is that you’ll notice ingredients overlap throughout the week. Sweet potatoes show up twice. Taco toppings get used more than once. Rice carries into another meal.
It makes grocery shopping easier and helps cut down on food waste.

This is one of those dinners that feels a little fancy without requiring much effort. If steak is on sale at Sprouts, this is almost always what I’m making with it. The sweet potatoes go into the oven first, the steak cooks in about 10 minutes (with about 10 minutes to rest) and the asparagus finishes while the steak rests. Everything comes together at the same time. 30 minutes start to finish.
Sweet potatoes
Wash and cut in half lengthwise.
Place cut-side down on a baking sheet.
Bake at 425° for about 30 minutes.
Finish with flaky salt. (Sometimes I’ll add cinnamon for a bit of a unique flavor). Leftovers can be repurposed with a little vanilla yogurt for a fun dessert.
Asparagus
Swap ribeye for sirloin if it’s on sale.
Use broccoli or green beans instead of asparagus.
Leftover steak makes an amazing salad or to add into eggs for lunch the next day.
