I started a new, long-term series on socials called…

What I actually have for breakfast as a gut health dietitian.” Where I show you breakfast recipes I would make, even if social media didn’t exist! No trends, no gimmicks, no “gut health hacks” that overpromise and underdeliver. These are real, balanced breakfasts that actually support your digestion and keep you full.

Every breakfast will prioritize fiber, protein, and blood sugar balance, without overcomplicating it.

What you’re going to need:

  • 1 sourdough bread, toasted

  • 1 small avocado, mashed

  • 2 eggs

  • ½ cup low fat cottage cheese

  • 2 thick slices tomato (heirloom if possible!)

  • Salt & black pepper

  • Fresh basil chopped chiffonade to garnish

  • Red pepper flakes (optional)

How you’re going to make it:

1. Toast the bread. Slice in half after.

2. Grab a small frying pan and add 1/2 tbsp olive oil or avocado oil. Crack in the two eggs. Cover the pan and cook eggs until your liking. Once done cooking leave on the side.
3. Spread the avocado and cottage cheese onto the toast slices evenly.
4. Top each toast slice with 1 tomato slice and one fried egg on each.
5. Garnish with salt, black pepper, fresh basil, and red pepper flakes. Enjoy!
