Happy Friday, friends!
I’m comin’ at ya with another episode of the Jar Of Lemons show today (is that what we should call it? Input below!), and I’m sharing possibly one of my top favorite healthy dinner recipes of the summer. These bowls are GOOD. Really, really good!
There’s a lot going on in these bowls (in a good way), but they’re actually super simple to make. As in 30-minutes from beginning to end!
As we get ready to head into the school season and squeeze in those last bits of summer, I honestly think these bowls are perfect. Scroll down for the recipe and I hope you love them!

Here’s what we’ve got going on:
Peaches – You’ll need 3 fresh peaches. Look for peaches that are fragrant and give just slightly when gently squeezed. It’s okay if they’re a little underripe, though. They’ll soften in the oven!
Farro – I like to batch cook farro when meal prepping at the beginning of the week. Or, did you know that microwave farro packs are a thing?? Do what you need to do!
Lemon Juice – Freshly squeezed, always and forever.
Salt/Pepper
Zucchini – Love zucchini during peak zucchini season. Look for a medium-sized one!
Corn – Frozen corn actually works best for this one!
Chicken – I typically use leftover cooked chicken, like my Instant Pot shredded chicken. Store-bought rotisserie chicken is also great here! Season it to taste if you want.
Burrata Balls – Possibly my favorite part of this entire recipe. It’s like the treat at the end! Split these in half and add them to the tops of the bowls for a rich, mildly sweet flavor and soft fluffy cheese texture.
Fresh Basil - Straight from the garden! Or, well, Trader Joe’s.
Hot Honey Dressing – I combined olive oil, hot honey, and balsamic glaze for a simple dressing that’s sweet, savory, and just the right amount of spicy.
