Cheers to the “non-official” start of summer this weekend. Are you ready for the travel, pool parties, and get-togethers? I know I am.
But, are you feeling the budget pinch of planning a gathering? I understand. It is easy to feel overwhelmed by the pressure of creating a perfect spread.
This pressure often leads us to buy expensive, processed party platters. We think “gourmet” has to mean complicated or costly. But it does not.
You don’t need to spend a fortune to host a beautiful, healthy holiday. And if you aren’t hosting, these dishes are perfect to bring to a friend’s backyard party.
Think of this menu as a flexible guide. You can make it completely your own.
To keep your holiday healthy, inexpensive, and beautiful, follow these three rules:
Skip the bottled marinades: Store-bought dressings are often ultra-processed and expensive. You can make a fresh, flavorful marinade at home in two minutes. Here’s a delicious vinaigrette you can make with either fresh or dried herbs: Herbed Balsamic Vinaigrette. Follow the marinade recipe below for a classic Cuban taste.
Choose smart proteins: Chicken thighs or drums are typically half the price of chicken breasts. They stay incredibly juicy on the grill and have much more flavor.
Fill the table with grains, herbs and legumes: Whole grains and dry beans are naturally budget-friendly. They fill up your guests and look beautiful on a serving platter. With or without a recipe, add, taste and go!
For this feast, how about you balance the table with a juicy meat main dish and a vibrant, nutrient-packed vegetarian star.
Our vegetarian star is a reader favorite from my GourmetBetty blog, a dish I’ve highlighted before because it’s always a winner: Corn and Pepper Salsa. It is colorful, naturally gluten-free, and tastes even better when made a day ahead. Add your favorite color bean or edamame to this dish for a simple, budget-friendly protein boost. It is great on its own with chips or served as a side salad.
For the grill, how about making Mojo Chicken Thighs. This classic Cuban marinade uses fresh citrus and garlic. It tastes incredibly high-end but uses basic, inexpensive ingredients. Grill some red onion and peppers with the chicken for added flavor and looks great on the platter.

2 pounds bone-in, skin-on chicken thighs
4 cloves garlic, minced
1/2 cup fresh orange juice
1/4 cup fresh lime juice
1/4 cup lemon juice
1 teaspoon dried oregano
1 teaspoon ground cumin
1 tablespoon olive oil
2 teaspoons salt
1/2 teaspoon black pepper
Whisk garlic, orange juice, lime and lemon juice, oregano, cumin, olive oil, salt, and pepper in a medium bowl.
Place chicken thighs in a large dish or reusable silicone bag.
Pour the marinade over the chicken and coat evenly.
Cover and refrigerate for at least 2 hours (or overnight for best flavor).
Preheat your grill to medium-high heat.
Lightly season with S&P and grill chicken thighs skin-side down for 8 to 10 minutes.
Flip and cook for another 10 to 12 minutes. Ensure the internal temperature reaches 165 degrees.
Let the meat rest for 5 minutes before serving.
Oven Variation: If you do not have a grill, roast the chicken in the oven at 400 degrees for 35 minutes. This marinade also works beautifully on pork.
You do not need to bake or cook complicated side dishes to complete this table. Keep things natural, beautiful, and seasonal.
Fresh Watermelon: Buy a whole watermelon and slice it into thick triangles. It is typically affordable, hydrating, and acts as a gorgeous centerpiece on the table. It could be a refreshing dessert on its own, or a nice appetizer if you add feta and mint.
A Simple Dessert: Grill halved peaches or nectarines for a few minutes on the grill. Serve them warm with a tiny drizzle of raw honey and a sprinkle of cinnamon. It tastes like a gourmet cobbler without the processed flour and sugar.
Hosting a beautiful holiday does not require a triple-digit grocery bill. Here is a realistic cost estimate for some of the items based on the US averages calculated by the LLM (Large Language Model) Gemini.
