We’re proud to celebrate a remarkable milestone from our portfolio company Remilk, which has just launched The New Milk in collaboration with Gad Dairies, marking the first commercial rollout of its precision-fermented milk.
Fresh Fund was Remilk’s first investor, leading the company’s pre-seed round at its inception five years ago. It was one of those crazy bets - bold, uncertain, and surrounded by skeptics (and still is). What began as an ambitious idea by Aviv Wolff and Ori Cohavi, PhD, is now a commercial reality, reaching consumers across cafés, restaurants, and soon, retail shelves.
The road here was anything but simple: years of R&D filled with breakthroughs and setbacks, moments of doubt, strategic pivots, and above all - relentless perseverance. And while there’s still a long journey ahead, this milestone deserves to be celebrated. It’s a testament to the founders’ vision, resilience, and the phenomenal team they’ve built.
Investing in deep-tech ventures like Remilk is never easy. The cycles are long, capital is demanding, and progress rarely follows a straight line. A company like Remilk is a true moonshot. Many stars must align for it to succeed. It’s hard, it’s risky - but when it works, it can transform an entire industry.
This moment marks not only a breakthrough for Remilk, but a powerful reminder for us as a fund of why we do what we do, and why we’ll keep daring to back bold ideas early.

The company’s technology builds on pioneering research conducted at the Weizmann Institute of Science.
