Late July always feels like tomato season at its absolute peak.
The markets are overflowing, garden plants are producing faster than we can keep up, and the best tomatoes hardly need anything at all. This gazpacho is one of my favorite ways to make the most of them.
Yellow tomatoes create a soup that’s slightly sweeter and less acidic than the traditional version, while fresh corn adds another layer of summer flavor and soaked almonds lend a silky texture without any dairy. Everything comes together in the blender, then rests overnight while the flavors deepen and meld.
