This recipe brings back some really sweeeeet memories. Whenever I’d come home for the weekend from college, my mom would meal prep all of my favorite things to send back with me! It was truly the best feeling in the whole world to open my fridge throughout the next week to find healthy meals, homemade treats, & little notes from my mom. These spring rolls always made the list because they’re so fresh, absolutely delicious, and keep really well in the fridge for days. This is a recipe my family and I have been making for years because they’re actually that good, and one of those recipes you can eat for lunch and dinner without getting sick of them (believe me, I’ve done it & can confirm;)!!
These Asian Spring Roll Burritos are stuffed with charred chicken thighs, vermicelli noodles, thinly sliced veggies, & tons of fresh herbs, wrapped in butter lettuce & rice paper, then dipped in a creamy homemade Thai peanut sauce. They’re naturally gluten-free, dairy-free, & refined sugar-free, containing 35 grams of protein plus 8 grams of fiber in each serving! All of the fresh veggies, fruits, herbs, and aromatics provide an anti-inflammatory, nutrient-dense meal that’s really delicious!

Dairy-Free: There’s no dairy present in the sauce, marinade, or burrito contents.
Refined-Sugar Free: Every recipe I release is refined-sugar free! This one is sweetened using honey & mango!
Anti-Inflammatory: Ginger & garlic contain gingerols & allicin, which are considered anti-inflammatory compounds. This recipe is seed oil & refined-sugar free, which contributes to the anti-inflammatory profile. This recipe has moderate amounts of omega-3s, making its anti-inflammatory profile mostly driven by the abundance of the fresh veggies, fruits, & herbs vs a primarily omega-3-driven profile!
High-Fiber: This recipe contains 8 grams of fiber in each serving (about 30% of the recommended daily value). The fiber comes from mango, carrot, red cabbage, and avocado.
High-Protein: This recipe contains around 35 grams of protein in each serving from the chicken thighs & peanut butter. A recipe is defined as high-protein if it exceeds 20 grams per serving & this one is well above that number!
Blood Sugar Friendly: This recipe is very balanced with fats, fiber, & protein, which are key to balancing blood sugar spikes! Mango adds a notable source of natural sugars, so if you watch your blood sugar really closely, portion awareness is necessary.
Gut-Supportive: Green onions & garlic contain fructans (a prebiotic), & all of the colorful, fresh produce supports microbiome diversity following well-accepted general principles.
Autoimmune Supportive: Gluten-free, dairy-free, nightshade-free, and refined sugar-free. Aligning with the core recommendations for many autoimmune supportive approaches. However, peanut butter is technically a legume, which stricter elimination protocols do not include, so this aligns with general autoimmune-friendly guidance vs some stricter ones.
Endometriosis Friendly: Contains lean poultry, high fiber, and is dairy-free, aligning with dietary approaches commonly recommended for those with endometriosis.
Hormone Friendly: Estrogen metabolism is supported by red cabbage, which contains indole-3-carbinol, a compound associated with positive hormone benefits.
Perimenopause Support: Protein & fiber-rich, which helps support muscle maintenance and keeping blood sugar stable. Both highly important nutrition goals recommended in a perimenopause diet!
Cycle Syncing:
Follicular Phase: Because this recipe contains mostly fresh raw vegetables and lean protein, it is light & energizing; aligning well with the follicular phase needs.
Ovulatory Phase: The estrogen clearance focus of this phase is supported by the cruciferous cabbage & antioxidant-rich herbs.
Soy-Free: Coconut aminos are used instead of soy sauce, so there’s no soy present in this recipe.
Egg-Free: This recipe is completely egg-free!
Nightshade-Free: This recipe contains zero tomatoes, peppers, potatoes, or eggplant, making it nightshade-free.
PCOS-Friendly: The protein, fat, & fiber combined follows the recommended approach to manage insulin response, but mango contains natural sugars which raise the carb load in this recipe. So omit the mangos for a more PCOS-friendly recipe!
Hashimoto’s-Friendly: This recipe is completely gluten-free, dairy-free, and anti-inflammatory, which is what many Hashimoto’s diets call for. However, the cabbage does contain goitrogens, which some people are sensitive to. If that’s you, then you may want to lightly steam the cabbage to decrease its goitrogen content.
