Easy GF Weekly Issue 7: Ice Cream Recipes

This past week my preschooler had a tonsillectomy, so there have been lots of popsicles and ice cream, snuggles, books, and Bluey.

My kids are all out of school for the summer and my teens have stepped up to help with my work. Some of the videos you see on Instagram have probably been edited by one of them, and they’re also working on some recipe development for you (just wait until you try the mac and cheese, it’s SO good).

Did you know that most grocery stores carry gluten free ice cream cones?? They’re often on the end aisle in the frozen section (near the ice cream) and they are surprisingly good. I’ve gotten Joy as well as Let’s Do Gluten Free brands, and both are great.

This week, I’m sharing all my ice cream recipes on the blog. I hope you get to try one or four this summer!

While all of these were developed for the Ninja Creami (which I love, btw) but they will also work in an ice cream machine if that’s what you have.

Peaches and Cream Ice Cream

Dairy Free Vanilla Ice Cream (cashew-based, so creamy!!!)

Key Lime Pie Protein Ice Cream (my kids’ favorite)

Chunky Monkey Ice Cream (Ben & Jerry’s inspired banana-walnut-chocolate)

Orange Julius Protein Ice Cream

I only have 1 which is kind of sad because no-churn ice cream is so fun and easy to make! You don’t need any kind of equipment, but it does require freezing overnight.

I have one food and one non-food thing to share this week:

Non-Food: Olive and June sent me some nail supplies a few weeks ago. I never do my fingernails because I work with my hands a lot and haven’t had a lot of luck with nails/polish that stay on. I tried out a set of nails that have now been on for 11 days with no sign of coming off and that feels magical to me!

Food: Have I mentioned the gluten free Cheez-Its yet? We found them at Target a month or so ago and they did not disappoint. I’ve also had my eye on this homemade version from The Loopy Whisk (who is a great gf resource, too)
