A few things I’ve been up to:

  • My kids are wrapping up their final week of school

  • Went kayaking with some girl friends

  • Toured the state capitol with some awesome middle schoolers

  • Lots of walks

  • Did my nails for the first time in a long time

  • Spotted a few bald eagles (Minnesota is magical)

  • Watched a mama mallard and her ducklings in our creek

  • Developed vegan scone recipes-coming soon!

  • Our most recent weekly grocery run rang up at just $100 which, for a family of 7, is no small miracle. I love Aldi so much.

Did you know that oats are naturally gluten free? They are! BUT they are also very often cross-contaminated with wheat in the growing, harvesting, and/or packaging process.

This means that if you have celiac disease, you’ll want to be extra cautious about which oats (if any) you consume.

There’s a lot to unpack here, but the TL;DR version is that you want to look for a gluten free certification at minimum, bonus points if it’s also a purity protocol product (which means the oats have been grown, harvested, and packaged in a space free from gluten-containing grains.

This recipe is from my mother-in-law, which she got from her mom, so we’ve been making it for quite some time!

My favorite flour to use for waffles is King Arthur Measure for Measure, but Bob’s 1:1 or Cup4Cup or just about any other blend will work well too-waffles are very forgiving!

→I always add a few things to make these waffles a bit more filling, and have included that in the expanded recipe for paid subscribers.

I love making these waffles in mini Dash waffle irons so they’re the size of an Eggo waffle and easily fit in the toaster. So easy to keep in the freezer so the kids can pull one or two out and pop in the toaster.

Seven Sundays wild and free mix muesli has been my go-to breakfast several times this week. Quick disclaimer: this is an oat product that is not certified gluten free so I wouldn’t trust it if I had celiac disease. More of an option if you’re gluten intolerant.
