What do you cook when you really don’t feel like cooking? One piece of advice is to keep actual cooking to a minimum. That might sound strange coming from someone who cooks for a living, but some of the best dishes are just the result of a bit of clever assembling.
Another top tip for times like these is to keep a bag of frozen gyoza in the freezer. They cook in no time at all (I’m talking just a few minutes), and any that you can find in the supermarket or online will do. They are great added to a quick coconut broth, tossed through a noodle salad or served with a simple dipping sauce. One of my favourite easy lunches is gyoza drizzled with a quick peanut dressing and chilli oil. Oh my goodness, it’s so good.
Today, we’re taking things a step further on the flavour front and elevating this idea to make this incredible 15 minute dinner. You make the most gorgeous smashed cucumber salad - it’s another favourite in our house. It’s cool and refreshing and dressed in a delicious sesame soy dressing. This gets tossed together with the crispy gyoza and it’s all served on a puddle of the peanut sauce. It’s heaven.
You can steam or boil the gyoza, but I like to fry them so they get crispy bottoms. It only takes about 5 minutes and I like the contrast of the slight crispiness of the gyoza in the salad but steaming them works beautifully too - so go with whatever you have the energy for.
And if you’ve had a long day, smashing the cucumbers is really very satisfying! Enjoy!
