I almost didn’t include this recipe in this month’s Substack because it felt too simple. No special technique… No hard-to-find ingredients... No clever twist. But then I realized that’s exactly why it deserves a spot here.
I’ve made this dinner three times already on vacation, and we’ve only been here seven days. Every time I ask what everyone wants for dinner, this is the answer. It’s garlicky, lemony, buttery, loaded with Parmesan and somehow feels both effortless and special at the same time. Also, toddler approved!
The shrimp cook in minutes, the pasta comes together quickly (most intensive part is grating the whole head of garlic but I did that while watching Ratatouille with my kids so it doesn’t take much effort) and the whole thing tastes like summer.
