Every year I tell myself I’m going to soak up every second of summer… and then somehow it’s Labor Day before I know it. ESPECIALLY now that I have kids, the days fly by at what feels like an ungodly speed. I am very much not type A, but even I have found that I need a running list of the recipes I want to make before summer ends, or I’ll forget half of them until it’s too late. So consider this my late-summer cooking bucket list and hopefully it’ll inspire yours too!!
I’m writing this as I’m wrapping up a two-week vacation in East Hampton where I’ve completely unplugged and soaked up everything I love most about summer..taking my kids to the beach, cooking for family, and wandering the local farm stands to see what’s in season. You may have noticed I was a little quieter on Instagram, but that was intentional. I wanted to give myself the gift of being fully present, and it’s amazing how much inspiration comes back when you slow down. Some of my favorite recipe ideas weren’t born while I was trying to create content, but instead, they came from lingering over dinner, chatting around the grill, and coming home with bags full of tomatoes, basil, and sweet corn that simply looked too good to pass up.
So that being said, whether you’re cooking at home, at the beach, in a lake house, or in a vacation rental with a tiny kitchen and one good skillet, I intentionally chose recipes that don’t require fancy equipment, specialty ingredients, or hours in the kitchen. They’re the kinds of meals I actually make on vacation—easy enough to throw together after a day outside, but still special enough to remember.
