Back-to-school season is almost here (ugh I know!), which means dinner needs to be simple, healthy, and require as little cleanup as possible. This works for summer too because we always want easy, right?!
These are two of my favorite sheet pan dinners that have been on repeat lately:
✨ Blackened Sheet Pan Salmon with roasted potatoes, peppers, and onions
✨ Greek Sheet Pan Chicken with artichokes, yellow peppers, red onions, and all the bright Mediterranean flavors
One pan. Minimal prep. Easy cleanup. And leftovers that make lunch the next day a breeze.

1 1/2 pounds chicken thighs, sliced into strips (or chicken breast but he careful not to overcook)
2, 8 ounce jars marinated artichokes
1/2 red onion, sliced
