How Food Companies Engineer Products To Make You Eat More

Nobody accidentally invents a food you cannot stop eating. Formulation teams run sensory panels, adjust sugar and salt and fat ratios, test texture, and measure how much people buy after they try it. The target metric is repeat purchase and volume, and the fastest way to move that number is to build something that delivers a large reward signal while doing very little to shut down appetite. Those two goals are not in conflict. They are separate systems in your body, and food science has gotten good at pulling them apart.

The Soda Example

The version of this story that circulates in fitness circles usually goes that McDonald's swapped an ingredient out of their drinks because it was making people too full to buy more food. The documented history is less dramatic and still worth knowing. Across the early 1980s, the American beverage industry moved fountain and bottled drinks from sucrose to high fructose corn syrup, and the stated driver was cost. Sugar tariffs and corn subsidies made HFCS cheaper. Nobody has published an internal memo saying they were hunting for less satiety.

The physiology of what that swap does is well studied, though, and that is where the story has teeth. Twelve normal weight women consumed identical meals on two randomized days, with 30 percent of calories coming from either a fructose sweetened or a glucose sweetened beverage. On the fructose day, insulin responses were about 65 percent lower, leptin area under the curve dropped roughly 21 percent across 24 hours, and the normal postprandial suppression of ghrelin, your primary hunger signal, was significantly blunted (Teff et al., Journal of Clinical Endocrinology and Metabolism, 2004). Same calories, weaker fullness signaling.

Be careful how far you push that. HFCS is roughly 55 percent fructose and sucrose is 50 percent, so real head to head comparisons of the two sweeteners show much smaller differences than the pure fructose versus pure glucose design above. The honest takeaway is not that one syrup is uniquely evil. It is that liquid sugar in general is close to invisible to your satiety machinery, and a fast food combo puts 40 to 60 grams of it next to a meal that is already engineered for volume.

The Cleanest Evidence We Have

The best controlled demonstration that processing itself drives overeating came out of the NIH. Twenty weight stable adults lived on a metabolic ward and ate either ultra-processed or unprocessed diets for two weeks, then crossed over to the other. The menus were matched for presented calories, energy density, macronutrients, sugar, sodium, and fiber. Participants were told to eat as much or as little as they wanted.

On the ultra-processed diet they ate 508 calories more per day and gained 0.9 kg in two weeks. On the unprocessed diet they lost 0.9 kg (Hall et al., Cell Metabolism, 2019).

That result is the whole argument. When you match the macros and match the fiber and match the calorie density, and people still eat 500 extra calories a day, the extra intake is coming from how the food was built rather than what is on the label. Soft textures that require almost no chewing let you eat faster, and eating faster means you have consumed a large number of calories before the gut signals that report fullness have had time to arrive. Sweetness and salt arrive fast and intensely while the delivery of actual bulk to the stomach stays low.

The Fat And Carb Combination

There is also a reward mechanism that has no natural equivalent. Fat and carbohydrate rarely occur together in high amounts in whole foods, and it appears your brain values that combination more than either one alone. Using an auction task during fMRI, participants were willing to pay more for foods high in both fat and carbohydrate than for equally familiar, equally liked, equally caloric foods high in only one, and this potentiated valuation tracked with activity in reward regions including the dorsal striatum (DiFeliceantonio et al., Cell Metabolism, 2018).

Participants in that study were also worse at estimating the calorie content of fat plus carbohydrate foods than fat alone. So the combination is valued higher and estimated lower at the same time. Almost every hyperpalatable product on a shelf sits in that overlap: donuts, ice cream, pizza, chips fried in oil, fast food entrees. That is not coincidence, that is product development finding the peak of a response curve.

What This Actually Means For You

None of this makes anyone helpless, and it is not an argument that these foods are poison. It is an argument that willpower is being tested against a product designed by people with budgets and sensory labs, and that judging your intake by fullness alone is a losing setup when the food was specifically built to underdeliver on fullness per calorie.

The practical moves are unglamorous. Protein and fiber do the heavy lifting on satiety per calorie, so anchor meals around them. Liquid calories get counted deliberately or removed, because they will not count themselves. Whole food forms slow down eating rate on their own without requiring any discipline. And keep tracking, because your perception of how much you ate is the least reliable instrument you own around food that was engineered to distort exactly that.
