Here is the thing about hitting your protein goals that nobody talks about enough: dinner is not where the work happens. Dinner is where you finish the job. The women who consistently hit 100+ grams of protein a day are the ones who have already banked 70 to 80 grams before they even start cooking dinner — and that happens at breakfast and lunch.
Which means if those two meals are figured out in advance, the whole week gets dramatically easier.
This week, I’m sharing two staples I prep every single week — a breakfast and a lunch — that together land at just over 82 grams of protein. Prep them both on Sunday in under 20 minutes and you have 3-4 days of breakfast and lunch meals ready to grab from the fridge with zero thinking required.
That is the whole system. Simple, repeatable, and genuinely effective (and works PERFECT as a mom).
PB&J Greek Yogurt Bowls
Makes 4 servings | ~5 minutes | Stores up to 4 days
Per serving — Calories: ~235 | Protein: ~28.7g | Carbs: ~26g | Fat: ~3.6g | Fiber: ~5.5g
This one tastes like dessert for breakfast and delivers nearly 29 grams of protein per bowl. The peanut butter fluff — Greek yogurt mixed directly with PBfit — is thick, creamy, and genuinely satisfying in a way that standard yogurt bowls simply are not. The chia smash jam gives it that classic PB&J nostalgia and the strawberries and honey on top make it feel like something you actually look forward to eating in the morning.
Make four at once, store them covered in the fridge, and grab one each morning before anything else.
Ingredients (per bowl):
⟶ 200g 0% Fage Greek yogurt
⟶ 2 tbsp PBfit sugar-free powdered peanut butter
⟶ 1 tbsp Chia Smash sugar-free jam
⟶ 1 tsp chia seeds
⟶ ½ tsp honey
⟶ 50g fresh strawberries, chopped
Instructions:
Add Greek yogurt to a jar or container. Add PBfit and jam and mix directly into the yogurt until completely combined and smooth — it should look like a thick peanut butter cream. Top with chopped strawberries, chia seeds, and a small drizzle of honey. Cover and refrigerate. Stores well for up to 4 days — the chia seeds absorb moisture and actually improve the texture by day two.
Tip: prep four jars at once on Sunday while you are already in the kitchen. Stack them in the fridge and breakfast is done for the week.
Pickle Chicken Salad Boxes
Makes 4 servings | ~15 minutes | Stores up to 4 days
Per serving — Calories: ~445 | Protein: ~53.7g | Carbs: ~29g | Fat: ~13.3g | Fiber: ~3.8g

For the meal prep version I build it into complete lunch boxes: the chicken salad itself, sliced cucumber alongside for crunch and extra fiber, and Simple Mills gluten free crackers to round it out. Everything goes in a container together — grab and go, no assembly required at noon.
53 grams of protein per lunch box. Under 450 calories. Ready in fifteen minutes.
Ingredients (per lunch box):
⟶ 6.5oz rotisserie chicken breast, shredded
⟶ 2 tbsp 0% Greek yogurt (in place of mayo)
⟶ 2 tbsp dill pickle relish or finely chopped dill pickles
⟶ 1 tbsp dijon mustard
⟶ 1 stalk celery, finely diced
⟶ Fresh dill to taste
⟶ Salt and pepper
⟶ ½ cup cucumber, sliced
⟶ 1oz Simple Mills gluten free crackers
Instructions:
Pull the rotisserie chicken and shred into a large bowl. Add Greek yogurt, pickle relish, dijon, celery, dill, salt and pepper and mix until everything is evenly coated. Taste and adjust seasoning — be generous with the salt and lemon if you want it bright. Divide into four containers. Add sliced cucumber and crackers to each box. Cover and refrigerate for up to four days. Add crackers to each box but keep them in a small separate bag or section if you want them to stay crispy through the week.
