Late spring is strawberry season, and it’s the one I look forward to all year. There’s nothing like biting into a sun-warmed berry straight from the patch, juice running down your chin, knowing that this is as good as fruit gets. If you’ve been waiting for the perfect moment to start your summer canning, this is it.

The beauty of strawberry canning is how many directions you can go. Classic jam, of course, but also pie filling, syrup, juice concentrate, even pickled strawberries if you want to try something unexpected. These are all water bath canning recipes, simple enough for beginners and satisfying for experienced canners ready to fill the pantry after a long winter without fresh produce.
