Lately, work and life have me really busy. Living with two other adults working multiple jobs and studying, there is very little time to cook during the week for any of us.

I find meal prepping for 2 hours at the weekend a LIFESAVER! A big hearty salad with dressing, a couple of stir-fries and fried rice, a soup, some snacks like muffins or patties, overnight oats set in pots, healthy balanced smoothies in jars and a cheeky loaf cake. All ready in the fridge before the week starts! I have done all the work; you just need to download my meal plan and all PDFs and shop and cook. Try the meal plan and reduce your weekly stress!

Butter Chicken & Rice Traybake

Make cool nights comforting and warm with this easy, hearty, Butter Chicken & Rice Traybake. Made with juicy chicken drumsticks, fragrant spices and aromatic rice, this is a super delicious fusion of Butter Chicken & Chicken Biryani! Serve with pappadums and minted yoghurt. Perfect family dinner! Save the recipe and add to your weeknight cooking roster.

Serves 4

  • 8 chicken drumsticks

  • ¼ cup Greek yoghurt

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • 1 tsp grated ginger

  • 1 tbsp sugar

  • ½ cup butter chicken paste

  • 1 tbsp oil

  • 2 cups basmati rice, washed, rinsed and drained

  • 3 cups chicken stock

  • ¼ cup cream

  • ½ tsp ground turmeric

  • ½ tsp ground cardamom

  • ½ cup frozen peas

  • 2 French shallots, thinly sliced

  • ½ cup fresh coriander, to serve

  • 1 red chilli, thinly sliced, to serve

  1. Preheat oven to 200°C (180°C fan-forced). Add Lilydale free range chicken drumsticks to a bowl with Greek yoghurt, garlic powder, smoked paprika, ginger, sugar and butter chicken paste. Mix well and chill for 15 minutes.

  2. Heat oil in a large frying pan on medium-high heat. Add the marinated chicken drumsticks to the pan and cook for3-4 minutes on each side until seared and golden. Remove from heat.

  3. Add rice to a 32cm X 22cm X 7cm rectangular baking dish. Add chicken stock, cream, turmeric, cardamom and frozen peas. Place marinated chicken over the rice mixture. Top with shallots. Cover with foil and bake in the oven for 30 minutes. Remove from the oven and discard the foil. Return to the oven and bake uncovered for a further 15 minutes until the rice is cooked.

  4. Garnish with fresh coriander and serve with red chilli on the side.
