Maggie and Aaron have started their last semester of undergraduate studies. Christmas is over. The tree is down. The cold harsh reality of winter has set in. About two more months of cold weather. One month of really cold weather. At least there is football to break things up. For those who enjoy it. But I have recently found a little jewel that has brightened things for me. Kanzi apples.

How can Kanzi apples be such a bright light in this dismal part of the year? Well, I will tell you. I love apples. I’m, you may say, an apple a day person. When I run across a new apple I get excited. These are some sweet, tart, and crunchy little gems. When they sampled some of them at work I was hooked. I have not tried them in any baking adventures but will soon.

Back to football. The playoffs are here and the parties are in full swing. I have two new dips you can use at your football get together. One is a feta, lemon, and thyme dip. This feta dip recipe only takes 15 minutes to make. You just need a food processor or a blender. But not only is it a dip, it can be an appetizer, sauce, or a dressing. When you taste the feta dip, you get the feta, the brightness of the lemon and that is followed by the herbal hit of the thyme. We have used this dip on burgers, chicken, as an appetizer, and on salads. It goes great with veggies and crackers.

The other is my cheese sauce recipe. This cheese sauce recipe is very versatile. There are many variations to this cheese sauce. Add ground cumin, garlic powder, onion powder, and a bit of diced tomato you have a queso. Or add caraway seeds to a Swiss cheese sauce and you add a rye taste to it. Add hot sauce, pepperoni, or anything you like. Make it your own!

I have also started making salads from chopped and roasted cabbage. Roasting the cabbage brings out a nice flavor that adds a smoky taste to the salads. Once I get more practice with that I will include some recipes.

It’s cold and snowy. Watch your pets and loved ones. Unless you are vacationing somewhere warm like Mexico.
