Two ingredient pancakes

While in Vanuatu, we stayed at two places that served pancakes for breakfast and I was surprised by the texture. Although Vanuatu has cows, there’s no dairy and they’re primarily used for beef. Dairy products are imported. While most people keep chickens, they’re not kept in coops so they don’t collect eggs, making them an extra expense. I was intrigued by their pancake recipe, so I back into the perfect kitchen to speak with the girls cooking. We all loved this pancake, my mum even wanted them for lunch too.
