Osso buco is a relatively inexpensive cut of meat, especially when using beef instead of the traditional veal. Since good meat is expensive, I only buy a few pieces for our family and stretch the meal with beans. The next day we can make another meal with it and enjoy it over pasta. I love this way of eating and slow-cooked meals are joy of winter. They require minimal effort, just one pot, and you can start them for lunch and have them ready for dinner.
