Today I’m sharing a short preview from my full ginger bug video, where I walk through exactly how to create and maintain a ginger bug, show the day-by-day progress, and use it to make naturally carbonated homemade probiotic soda.

A ginger bug is a wild fermentation starter made with fresh ginger, sugar, and water. As it ferments, the natural microbes on the ginger begin feeding on the sugar and producing bubbles, acidity, and beneficial compounds. Once active, that fizzy little starter can be used to ferment sweet teas, fruit juices, and herbal infusions into naturally bubbly drinks.
Basically, it’s the foundation for homemade probiotic soda.
And this is why I love it so much.
You get to create drinks that are full of probiotics, fizzy, and flavorful, but made with real ingredients. You can control the sweetness, the flavor, the herbs, the fruit, and how fermented you want the final drink to be. It feels like soda, but with so much more intention behind it.

• 1 cup filtered water
• 1 tablespoon grated fresh ginger
• 1 tablespoon cane sugar
Each day, add:
• 1 tablespoon grated fresh ginger
• 1 tablespoon cane sugar
Stir daily and keep the jar at room temperature. Over the next several days, the mixture should become bubbly, lightly tangy, and active enough to use as a starter for homemade soda.
Once your ginger bug is active, you can use it to ferment fruit juices, herbal teas, and sweetened infusions into naturally carbonated drinks.
