If you’ve been to the grocery store recently, then you already know the feeling: you walk in for “just a few things” and somehow leave $100 poorer. Grocery prices have gotten absolutely wild, and every week I’m trying to figure out how to make meals that are delicious, satisfying, and don’t require taking out a small loan.
It got me thinking… how often am I actually paying attention to the total cost of an entire week of dinners? This month, I decided to challenge myself to make five weeknight dinners (with enough leftovers for lunches throughout the week) while keeping my grocery bill under $65. As always, though, I still wanted meals I’d actually be excited to eat. I think you’ll be pretty impressed…
For dinner this week, we’re having:
Animal Style Baked Potatoes
Mexican Street Corn Dense Bean Salad
High Protein Spicy Rigatoni
Sheet Pan Pineapple BBQ Chicken Bowls
Kung Pao Chicken & Rice
Let’s make dinner!
