I have officially declared this summer a tomato summer. If you’ve been keeping up with my garden updates, you’ll know it’s actually doing pretty well this year, and I have finally planted tomatoes! I don’t quite have a big enough harvest to cook with yet, but all the gardening definitely helped to inspire this recipe. I paired juicy cherry tomatoes with burrata, basil, and angel hair pasta for what might be the ultimate summer pasta.
And don’t worry… you don’t need a garden overflowing with tomatoes to make it. Store-bought cherry tomatoes work just as beautifully! It’s an easy recipe to enjoy all season long. Let’s cook!
