Happy spring! To answer some recent FAQs: No, ramps aren’t back yet. Yes, I’ve seen snap peas (albeit only from one farm). And no, Rainier cherries are still nowhere to be found.

I just got back from a quick work trip to Miami, where the sufficiently warm weather and high humidity now have me in summer mode. And with that, a need for quick meals that’ll allow me to maximize my time outdoors. That’s what most of this week’s meal plan will focus on: Meals that require little active prep time or can be meal-prepped.

My haul breaks down to 49 servings of meals and snacks — $3.39 per serving. The cheapest was my $0.50, while the priciest was my $27 grass-fed short ribs.

Fruits + vegetables

  • green gem + red romaine lettuces

  • flowering mustard greens

  • grumolo (heirloom Italian chicories)

  • golden garlic

  • stonecrop
