Every year, my friends and I book a long weekend in a Catskills Airbnb.

As such, every year, I moonlight as a private chef, cooking breakfast, lunch, snacks, and dinner for 10 people for 4 days (it’s about as stressful and logistically complicated as you might expect).

I’m on vacation too, so I try to make these meals as streamlined, easy, and quick to cook as possible. So, here’s night one: a Greek-inspired grillout.

My haul breaks down to 8 courses for 10 people — $24.96 per person. The cheapest was my $3.50 fairytale eggplants, while the priciest was my $81 pasture-raised chicken thighs (I got almost 6 pounds).
