Braised Pork Shoulder
The pork gets fall-apart tender in a rich red wine sauce, and I would absolutely serve it over the mashed cauliflower below so every last bit of that sauce has somewhere to go.
INGREDIENTS:
2.5 lbs pork shoulder
2 tbsp olive oil
2 tbsp butter
1 onion, chopped
2 ribs celery, chopped
1 carrot, chopped
6 cloves garlic, chopped
1 tbsp kosher salt
Fresh ground black pepper
3 tbsp tomato paste
2 tbsp flour
1 cup red wine
2 cups beef broth, low sodium
1 bunch parsley, tied
2 bay leaves
Mashed Cauliflower
Mashed potatoes will always have my heart, but this is one of those vegetable swaps that actually earns its place on the plate. Roasted garlic, butter, cream cheese, and heavy cream make it creamy enough to feel indulgent, and it happens to be the perfect landing spot for anything saucy.
INGREDIENTS:
1 large head cauliflower (about 2 lbs), cored and cut into 1-inch florets
4 cloves garlic, peeled (for roasting)
1 teaspoon olive oil
2 tablespoons unsalted butter
2 ounces cream cheese, softened
1/4 cup heavy cream (or unsweetened almond milk for dairy-free)
1/2 teaspoon salt
1/4 teaspoon black pepper
Pinch of nutmeg (optional)
Chopped fresh chives for garnish
Corn & Black Bean Shrimp Enchiladas
These are such a good break from the usual taco-night rotation when you want Mexican food with a little more personality. The shrimp, corn, black beans, cheese, and red enchilada sauce make them hearty and a little spicy, and anything covered in melted cheese is already starting from a very strong position.
INGREDIENTS:
1 pound shrimp, peeled and deveined
1 tablespoon olive oil
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup corn (fresh, frozen, or canned)
1 cup black beans, drained and rinsed
2 cups shredded Mexican blend cheese, divided
1 (10 oz) can red enchilada sauce
8 small flour tortillas
Vegan Mushroom Wild Rice Soup
This one stays on repeat in our house for a reason.
INGREDIENTS:
¾ cup wild rice blend
4 cups mushrooms, diced
1 cup white onion, diced
2 cloves minced garlic
2 tablespoons vegan butter or oil
1 teaspoon dried parsley
5–6 cups vegetable broth
14 ounce can coconut milk
