Background: Ok, what is this magical singular ingredient that has a meaty texture and grills like a dream? It’s called lions-mane. For those that don’t know what lions-mane is, it’s a mushroom that is known for its meat like “flesh.” It’s packed with nutrients to help boost brain health, fights inflammation and supports gut health. Not only that, it can help alleviate feelings of anxiety and depression - hence why you are seeing it as an ingredient in some health tablets that support calmness. Pretty impressive for a mushroom if you ask me!
Why is it the perfect mushroom for a vegan chicken substitute with no soy or additives? Because of its awesome texture! I love to cook this down to a vegan steak but with just a few changes to the seasoning mix you can also transform it into an awesome chicken “breast.”
Where to buy lions-mane? This is a great question! I get my lions-mane from central market for those local to Texas. I linked it here. You should be able to find it at health food stores, or you can even try to see if you can spot it at your local farmers market. If you are truly dedicated - you can grow your own. How to prepare/clean: When cleaning lions-mane (or any mushroom) it is important that you do not wash it. Mushrooms absorb water which will ruin any crispy edges you are trying to achieve. Ensure to use a clean, dry paper towel and clean any debris. Cut off any piece you feel is inedible.
How to store: I recommend storing cooked lions-mane in an airtight container for up to three days in the fridge.
Important Note: Cooking lions-mane is a feeling - not an exact strategy. It requi
res pressing and observing. Don’t be too hard on yourself! As long as you press away the excess liquid in the mushroom - you will be left with an awesome treat.
