Part of my training included a two year Integrative Medicine Fellowship through the University of Arizona School of Medicine. Today, I want to share with you an easy Avocado Toast Recipe and highlight some of the super-foods!
Ingredients
1x slice of Dave’s Killer Bread 21 Whole Grains
1/2 Avocado
1 whole egg
3TBSN milk
15mL of EVOO
6g of Balsamic Vinegar
Squeeze of Lime Juice
Squeeze of Lemon Juice
Seasoning/Salt to taste.
AeroFarms Microgreens Rainbow Mix
Roma Tomato quartered/sliced to taste.
Directions:
Toast bread on heated cast iron skillet + set aside. Mix milk, 1 egg, EVOO + salt. Add mixture to heated cast iron skillet for 1-2min on high heat. Mash avocado + spread on toasted bread. Add eggs on top. Add hand-full of AeroFarms MicroGreens Rainbow Mix on top. Squeeze lemon + lime juice. Add tomatoes. Drizzle Balsalmic Vinegar.
Super food highlights:
“Flavonoids”
These occur naturally in a variety of foods, giving them their bright colors. In this recipe in the EVOO, tomato and citrus juice. Flavonoids are naturally anti-inflammatory and convey cardioprotective effects.
“Lignans”
Lignans are found in whole grains and seeds, the basis for the toast in this recipe. They are a class of phytoestrogens which provide protective against cardiovascular disease, breast and prostate cancer as well as osteoporosis.
“Carotenoids”
The alpha and beta Carotene in green leafy vegetables, in this recipe AeroFarms Microgreens Rainbow Mix, along with the Lycopene in tomatoes and Lutein in the egg yolks presents a strong show for carotenoids. Carotenoids have anti-oxidant and pro-vitamin A activity resulting in anti-inflammatory and immune enhancing effects.
“Glucosinolates”
Glucosinolates also known as “cruciferous” vegetables such as kale, broccoli or Brussel sprouts are associate with anti-cancer and detoxifying effects.
