These are a fun summer afternoon project when you have plenty of seasonal blueberries. They really taste like a frozen blueberry pie! The ice cream sandwiches need to freeze overnight before slicing so plan ahead.

If you don’t want to spend the time making the sandwiches, you can just make the ice cream. It has a gorgeous color and is delicious on its own or alongside pie or cobbler.
