Last week, I introduced ÈDN Table, my latest experience bringing to life strands of research I’ve been developing across cookbooks, Substack, and ongoing writing.
What might tabbouleh have looked and tasted like before tomatoes arrived in our region?
That’s where the conversation begins.
The inaugural ÈDN City Table opens next Friday at Arthaus Beirut, bringing together a ten-course menu shaped by terroir, trade, migration, and the forgotten histories hidden between borders that have shaped the foodways of West Asia, North Africa, and Southern Europe.
This video offers a small glimpse into some of the dishes, ideas, and stories behind the menu.

If you’ve been considering booking, please don’t leave it until the last minute. With preparations already underway and only a handful of seats remaining, reservations will need to close shortly so we can ensure an intimate and thoughtful experience.

P.S. My chef’s jackets are still in Dubai, so I’ve stolen my father’s shirt. If I look less like a chef and more like a priestess about to bless some vegetables, that’s why. I kinda like the look though 😅
