Strawberry, Chamomile & Salted White Chocolate Cake

Hi friends,

Don’t be like me and bake this cake on one of the hottest days of the year. You’ll be sweaty and overstimulated, with sticky fingers (and a stickier phone) trying to catch the drips of ganache and jam so you can take a half decent picture.

Perhaps wait until it’s ever so slightly cooler to enjoy this strawberry, chamomile & salted white chocolate cake to its fullest potential. This is a version of the cake I took to Cake Picnic last weekend and as always, it was a very sweet afternoon in Greenwich Park surrounded by hundreds of other cakes and bakers.

Last year, I went down the chocolate route but this year, I decided to go full on summer mode with layers of soft chamomile sponge drizzled with chamomile syrup, strawberry jam, a whipped & salted white chocolate ganache and the silkiest vanilla Swiss meringue buttercream to bring it all together.

If you’ve been a here a little while, you’ll know that layer cakes aren’t really my go to. I appreciate the time and effort that goes into them and love how they give you the space to incorporate lots more flavours and textures within each cake layer. But give me a single layer cake any day of the week and I’m a happy girl.

So, instead of recreating the exact same cake, three layers and all, I’ve turned into a more approachable one layer cake, with all of the same flavours.
